REDFOX electric folding pans offer perfect heat distribution. The useful volume of the bath is 50 l. The pans have an all-stainless steel casing, the top plate is made of AISI 304. The thickness of the bottom of the pan is 12 mm. It is possible to choose between a steel and stainless steel bottom. Due to its properties, the stainless steel bottom of the professional folding pan is suitable for dishes with a higher proportion of water such as soups, sauces, etc. However, it does not achieve as high a thermal conductivity as the steel bottom and is also more susceptible to wear. Conversely, due to its high hardness and perfect thermal conductivity, the steel bottom of the pan is more suitable for dishes with a higher proportion of fat or oil. Compared to a stainless steel bottom, it is more susceptible to corrosion, so it is necessary to maintain a permanent oil film on the surface. The attachment of the lifting system to the bath is done outside the heated area of the bath. REDFOX folding pans offer a high temperature range of 50-300 °C. REDFOX pans have a specially designed tilting mechanism that allows the bottom of the pan to be fully heated to maximize heat distribution. The distribution of the heating elements ensures an even distribution of heat, thereby allowing full use of any part of the surface and preventing the formation of cold zones. The REDFOX 700 kitchen line is equipped with proven pans with mechanical folding, which is designed for maximum simplicity and reliability of operation. The temperature is distributed over the entire surface of the bottom. The maximum use of the bottom area increases the efficiency and capacity of the equipment.
