Tilting Bratt Pans
RM bratt pans are completely made of stainless steel AISI 304, they have a fixed bottom in two variants, stainless steel or steel-alloy. The lid is equipped with a condensation frame and an ergonomic handle for easy opening. All RM bratt pans have separate taps for hot and cold water. The heating elements and gas burners cover the entire area of the bottom of the bath with a thickness of 12 mm and at the same time offer a high output of up to 0.24 kW/l, which makes the pan suitable even for busy operations. The working temperature range of the pan is from 50 to 300 °C. The pans are made in a standard size of 80 cm wide. Thanks to its properties, the bottom of the pan in the stainless steel version is suitable for preparing dishes with a higher proportion of water such as soups, sauces, etc. However, it does not achieve high thermal conductivity like the steel-alloy bottom and is more prone to wear. The bottom of the steel-alloy pan is more suitable for dishes with a higher proportion of fat or oil due to its high hardness and perfect thermal conductivity. Compared to a stainless steel bottom, it is more prone to corrosion and therefore it is necessary to maintain a permanent oil film on the surface. Folding pans are available in two folding versions.
